Natural agriculture – plastic free
At the Bar we will reduce, until completely remove, the use of disposable plastic, the most harmful to the Earth.
No more plastic cups, straws and pallets, nor various containers.
The plastic bottles of mineral water will be replaced by a microfiltered water refill service, served in containers owned by our clients or in stainless steel bottles purchasable directly at the restaurant.
We have also recently included only Italian draught beers (Ichnusa, unfiltered Ichnusa and red Moretti), mostly tapped without the use of Co2.
wines, flours, pasta, vegetables
A wide separate chapter would deserve our wine list. Our proposal includes many natural, biodynamic and organic wines, among which, all those of the Sequerciani Farm. Sequerciani.
Natural wines are (like us) free and pure, strategically using the forces of nature. This includes spontaneous fermentation and the absence of filtration or additives, possibly also avoiding sulphites. Nothing is added or removed.
The flours used in the Pizzeria are the most suitable in terms of digestibility and healthiness.
The bread served at table rises with natural yeast. Just like our fresh pasta, it is made by our chefs using Verna and Senatore Cappelli flour from the Sequerciani Farm.
Most of the vegetables are provided by Sequerciani’s garden.
Meat and fish come mostly from local supplies, from our territory and from the Gulf of Follonica.
