NATURAL WINES
PRODUCED IN TATTI BY THE BIODYNAMICA FARM SEQUERCIANI
Wine has always been a natural product! The production protocols and winemaking methods have evolved to bring us to the current high-quality standards of Italian wine. Unfortunately, this has also led to a standardization of tastes and contents.
Make natural wine, make it in an artisan way, means start from scratch: from the raw material, from the soil that produces it, from the peculiarities of each vintage in the phase of maturation, vinification and ageing.
The wine is born alone. If you let it be. And only then, will it tell its true story. From the clay-filled soil, the sunny days of Tuscan summer, and the cool nights by the sea.
We, the Sequerciani team, do not want to meddle, we want to simply listen to the story that the wine is telling us. We work with the utmost care, without adding or filtering anything. We let things happen. It is a pure appreciation that engages the senses with what comes from nothing but the sun, the earth, and the grapes.
And we do so by re-evaluating and re-proposing some of the old vines in the southern part of Tuscany that for agronomic or more often economic reasons (low yields) have been abandoned and replaced by more productive, perhaps international, vines.
This is the case, among others, of the powerful and deep Pugnitello with its elegant polyphenols that give an intense red colour and a complex nose that ranges from spices to black fruits; of the Foglia Tonda, which with its extraordinary acidity can offer incredible vegetable aromas of Mediterranean scrub and a freshness on the palate even after years of ageing; or the Aleatico with its beautiful sweetness and well-balanced aromas. Finally, Vermentino macerated in amphora or Ciliegiolo which ages in concrete tanks.
